BBQ Leftover Bowls

  1. Pre-cooked Mashed potatoes
  2. 2 cups sharp cheese
  3. ½ cup sour cream
  4. Salt and pepper
  5. 5 slices bacon, cooked and chopped
  6. 3 Green onions, chopped
  7. Leftover bbq meat (at least 1 pound)
  8. Leftover veggies (corn and green beans work great)
  9. Fried onions

  1. Combine the leftover mashed potatoes (at least 3 cups) with sour cream, bacon bits, green onion and cheese.
  2. Place in a microwave safe dish and microwave on high for 4 minutes.
  3. Stir and then return to the microwave for another 4 minutes.
  4. Heat the leftover BBQ and veggies in the oven.

To make the bowl:

  1. Add a dollop of mashed potatoes, top with your veggie and then BBQ meat.
  2. Sprinkle with additional cheese and enjoy.
