Cinco de Mayo is this week, and Sassy Mama has some recipes perfect for those who are celebrating.

In today’s Sassy Mama segment, Sassy is showing the News 9 team her recipe for refried beans.

Ingredients:

  1. 2 cups pinto beans
  2. 5 cups water
  3. 2 slices thick cut bacon, cubed
  4. 1 onion diced
  5. 3 cloves garlic, diced
  6. 2 teaspoon salt
  7. 1 teaspoon pepper
  8. ½ cup lard
  9. ½ - 1 cup water

Directions: 

  1. Prepare the beans by cooking in a slow cooker with 5 cups water, bacon, onion, 2 cloves of garlic, salt and pepper. 
  2. Once the beans are cooked, drain and set aside. 
  3. To make the refried beans add ¼ cup of lard to a skillet over medium heat. 
  4. Add ½ of the beans and press with a potato masher. 
  5. Add water till you receive the desired texture you are wanting. 
  6. Thinner beans are perfect for scooping and thicker is best for burritos or tostadas.
