Pork Egg Rolls

  1. 1 pound ground pork or chicken, browned
  2. 1 teaspoon vegetable oil
  3. 1 teaspoon grated fresh ginger
  4. 2 cloves garlic, finely chopped
  5. 2 green onions, sliced thinly
  6. 1 package traditional coleslaw mix
  7. 1 teaspoon sesame oil
  8. 1 package egg roll wrappers

To prepare the egg roll filling:

  1. In a large skillet, brown the ground pork or chicken in vegetable oil.
  2. Stir in the grated ginger, chopped garlic, green onions, coleslaw mix, and sesame oil.
  3. Continue to cook until the cabbage is completely wilted and tender.
  4. Remove from the heat and allow the mixture to cool before rolling.
  5. To prepare the rolls:
  6. Place egg roll wrapper on a clean cutting board with a corner face you (like a diamond on the board).
  7. Spoon 2 tablespoons of the egg roll mixture horizontal on the wrapper.
  8. Dip your finger in a bowl of clean water and run along all the edges of the wrapper.
  9. Fold the horizontal corners over the top of the filling till they touch.
  10. Now, take the corner closest to you and roll over the middle and continue rolling toward the remaining corner.
  11. Set seam side down on a parchment lined baking sheet. 

To cook:

  1. Fry in 2 inches of oil till brown and then flip over and cook till the other side is browned or cook in an air fryer for 12 minutes!
