Cranberry Coffee Cake
- 1 box Cinnamon Coffee Cake mix
- 2/3 cup milk
- 1/3 cup vegetable oil
- 1 egg
- 1 cup cranberry sauce
- 4 ounces cream cheese, cut into chunks
- ½ cup pecans, chopped
- Preheat oven to 350 degrees.
- Spray 8x8 baking pan with nonstick cooking spray.
- Prepare the coffee cake by mixing together the cake mix with milk, vegetable oil and an egg till smooth.
- Spread ½ of the cake mix into the bottom of the baking pan.
- Spread cranberry sauce over the top of the cake mix, add dollops of cream cheese and sprinkle ½ of the topping mix (came with the cake mix).
- Spread the remaining topping mix to the top of the cake and gently press into the cake.
- Sprinkle with pecans.
- Bake for 40 minutes.
- Test the center of the cake to make sure it is cooked through.
- Cool for at least 10 minutes before cutting into squares to serve.
