Curry Chicken Salad

  • 4-5 boneless skinless chicken breasts
  • 6 cups water
  • Sea salt
  • 1 1/2 cups good mayonnaise
  • 1/4 cup mango chutney, (I use the Major Grey’s brand)
  • 4 tablespoons curry powder
  • 3 green onions chopped
  • 2 green apples, chopped
  • 1/4 cup currants or dried blueberries
Boil the chicken breasts in a stock pot with 1 teaspoon of salt and 1 tablespoon curry powder for 20 minutes or until cooked through. Drain the water and cut the chicken into bite-size pieces. In a small bowl whisk together the mayonnaise, mango chutney, 2 tablespoons of curry powder and salt and pepper to taste. Cut the green apples into bite-size cubes and placed into the bowl. Add the dressing over the top of the apples and chicken and tossed together sprinkle with dried blueberries and green onions and serve.
