Description
Lacey Swope made this never-fail peanut brittle recipe with her grandmother every year around Christmas.
Ingredients
- 2 cups white sugar
- 1 cup water
- 1 cup white corn syrup
- 1 tsp soda
- 1/2 tsp salt
- 2 tbsp oleo (a.k.a. margarine)
- 1 package raw and shelled peanuts
- 1 tsp vanilla extract
Instructions
- Cook: Cook sugar, water and syrup in a large saucepan until a small amount tested in cold water forms a soft ball. (If you have a thermometer, it should be 250 degrees.)
- Add Peanuts: Add peanuts and allow the mixture to reach 300 degrees. It should turn golden brown.
- Add Butter: Remove from stove, add soda, butter and vanilla, stir well.
- Pour: Pour into a butter platter or cookie sheet covered with parchment paper. Once cool, break into small pieces.
