Summer No Guilt Salad
- 1 package prepared quinoa
- 1 can white kidney beans, drained well
- 3 cups cherry tomatoes, cut in half
- 1 red pepper, chopped
- 1/4 red onion chopped
- Juice of one lemon
- Olive oil
- Salt and pepper
- Combine all of the ingredients in a large bowl and drizzle with olive oil.
- Add salt and pepper to taste and chill until you are ready to eat.
