Pumpkin Spice French Toast

  • 1 loaf brioche bread, sliced thick
  • 4 large eggs
  • 2/3 cups half and half
  • 1/2 cup pumpkin puree
  • 1 vanilla paste
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/4 cup sugar
  • 1 1/2 tsp ground cinnamon
  1. Set a large non-stick skillet set over medium heat, add a small amount of butter and melt.? In a shallow dish or pie pan whisk together the eggs, milk, pumpkin puree, vanilla paste, 1 teaspoon cinnamon and pumpkin pie spice. 
  2. Dip the bread into the mixture, flip and continue cooking till browned. 
  3. Meanwhile, in a small bowl, combine the sugar and  1 1/2 teaspoon cinnamon, set aside. 
  4. Remove the fully cooked french toast from the skillet and roll in the cinnamon sugar mixture.
  5. Serve hot with maple syrup.
