Description

A simple and delicious homemade pancake recipe made from scratch using basic ingredients like eggs, butter, milk, and baking powder. Perfect for a classic, fluffy breakfast any day of the week.


Ingredients

  • 1 1/2 Tbsp. flour
  • 3 Tbsp. sugar
  • 1 Tbsp. baking powder
  • 2 tsp. baking poder
  • 1 tsp. salt
  • 1 1/2 c. milk
  • 1/2 tsp. vanilla
  • 3 Tbsp. melted unsalted butter
  • 2 eggs

Instructions

  1. Beat the eggs: In a large mixing bowl, lightly beat 2 eggs.
  2. Add wet ingredients: Stir in 3 tablespoons of melted butter, 1¼ cups of whole milk, and 1 teaspoon of vanilla paste or extract.
  3. Combine dry ingredients: In a separate bowl, mix 3 tablespoons of sugar with 1 tablespoon + 2 teaspoons of baking powder.
  4. Mix it all together: Slowly stir the dry ingredients into the wet ingredients. Mix until just combined — a few lumps are okay. Don’t overmix.
  5. Adjust the consistency (if nee: If the batter is too thick, add a little water or more milk to thin it out. For thinner pancakes, up to ¼ cup extra liquid may be used.
  6. Preheat the skillet or griddle: Heat a nonstick pan or griddle over medium heat. Lightly butter the surface.
  7. Cook the pancakes: Pour small scoops of batter onto the pan (use a ¼ cup measure for even sizing). Cook until bubbles form on the surface and the edges look set, then flip and cook the other side until golden brown.
  8. Repeat: Continue with the rest of the batter, adding butter to the pan as needed. Remember: the first pancake usually doesn’t come out perfect — the second and third are better!
