Dietitian Anna Hicks with the Hillcrest Healthcare System joined News On 6 at Noon to show us how to make baked salmon with mango salsa.
Ingredients
- 2 salmon fillets, 6oz each (skin on)
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp canola or olive oil
- 1 ½ cup diced mango
- 1 ½ cup diced tomatoes
- 1 lemon
- ½ cup chopped fresh cilantro
Instructions
- Step 1: Preheat the oven to 450 degrees Fahrenheit. Line baking sheet with foil and spray with cooking spray.
- Step 2: In a small bowl, combine paprika, garlic, salt, black pepper. Sprinkle the spice mixture evenly over the salmon fillets.
- Step 3: Place salmon on the baking sheet skin side down. Cook for 12-16 minutes. The salmon is done when it flakes easily with a fork.
- Step 4: While salmon is cooking, combine mango, tomatoes, cilantro, and half of the lemon juice in a medium bowl.
- Step 5: Remove salmon from oven/grill and spritz with the remaining lemon juice. Serve each fillet with ½ cup of the salsa.
