Step 1: Spread a thin layer of softened butter on one side of each slice of sourdough. Place one slice, butter-side down, in a skillet over medium heat. Layer on the smoked cheddar, warm BBQ beef, and pepper jack, then top with the second slice of bread, butter-side up.
Step 2: Cook until the bread is golden and the cheese is melted, about 3–4 minutes per side. Press gently with a spatula as it grills to help everything melt together.
Step 3: Slice and serve hot—smoky, cheesy, with just enough heat.
