Banana Upside Down Cake

1 yellow cake mix

3 eggs

1 cup milk

1/4 cup vegetable or canola oil

1/4 cup sour cream

3-4 bananas, peeled and cut lengthwise

1/2 cup dark brown sugar

1 stick butter

2-3 tablespoons spiced rum

Cinnamon

Preheat oven to 350°. Prepare the cake mix by adding the milk, Oil, sour cream and eggs. Beat for two minutes or until smooth. In a 9 inch cast iron skillet heat butter on stove top at medium high heat till browned slightly. Stir in brown sugar and continue cooking until it begins to caramelize. Carefully pour in 2 to 3 tablespoons of spiced rum and continue to stir for 30 seconds. Layer the bananas in the caramel sauce and pour the cake mix over the top and immediately place in the oven to cook for 30 minutes. Carefully removed from the oven and run a knife along the edge of the cast-iron pan. Onto a large platter. Serve with whipped cream or vanilla ice cream.
