Ingredients:
Fresh plantains
Canola or peanut oil
Pour oil into a fry pan and heat to medium high heat. Do not heat till oil smokes.
Cut plantains into one into rounds. Fry in oil till they are dark brown and caramelized on both sides.
Remove from the oil and drain on paper towels before serving.
