Millionaire Shortbread
Shortbread:
12 tablespoons unsalted butter, cold
2 cups all purpose flour
1 teaspoon salt
Caramel Layer:
1 can sweetened condensed milk
1/2 cup light brown sugar
3 tablespoons cookie butter
1 teaspoon salt
Chocolate Layer:
5 ounces semi sweet chocolate
2 teaspoons coconut oil
Preheat oven to 350 degrees. Line a 9x13 baking pan with parchment paper creating a “sling” for easy lifting after cooking.
Spray pan and parchment paper with nonstick cooking spray.
In a food processor, pulse the cubed butter into the flour until beads form.
Press the shortbread into the bottom of the pan and bake for 20 minutes or until golden.
Remove from the oven and cool.
While the shortbread is cooling stir together the sweetened condensed milk, brown sugar, cookie butter and salt into a 5 quart saucepan over medium low heat.
Bring the mixture to a boil while stirring continuously.
Once the mixture comes to a boil continue to stir until it reaches a light nutty brown and becomes thick.
This process will take about 12-15 minutes.
Pour the hot caramel over the top of the shortbread and spread evenly.
Cool on the counter before continuing with the chocolate layer.
Once the caramel has reached room temperature, melt the chocolate chips in a glass bowl in the microwave.
Heat and stir every 30 seconds until melted.
Stir in the coconut oil.
Pour the melted chocolate over the top of the cooled caramel.
Spread evenly to cover completely.
Allow the bars to sit on the counter for 10 minutes and then sprinkle with flaked sea salt.
Chill in the refrigerator for about an hour.
Remove from the refrigerator and cut into small bars.
