Mushroom Chicken & Orzo

  1. 5-6 boneless skinless chicken thighs
  2. Salt & pepper
  3. 1 cup onion, chopped
  4. 1 -2 cups mushrooms, chopped
  5. 1/2 teaspoon oregano
  6. 1/2 teaspoon paprika
  7. 2 teaspoons minced garlic
  8. 1/2 teaspoon salt
  9. 1 1/2 cups chicken stock
  10. 1/2 cup white wine
  11. 1 cup orzo pasta
  12. Parmesan cheese 
  13. Fresh parsley


  1. Using an instant pot, set on sauté mode drizzle olive oil in the bottom of the pan.
  2. Salt and pepper the chicken thighs and set into the pot to cook till browned on both sides.
  3. Remove from the pan and set aside.
  4. Sauté the mushrooms, onions, minced garlic, and all seasonings till onions are translucent.
  5. Stir in the chicken stock and white wine and make sure to scrape up any browned bits left on the bottom of the pan.
  6. Pour in the orzo And stir.
  7. Set the chicken thighs on top.
  8. Place the lid back on the instant pot and cook on HIGH pressure for 5 minutes.
  9. Release the pressure from the pot after five minutes and sprinkle with freshly grated Parmesan & chopped parsley.
  10. Serve with your favorite veggies.
