1 1/2 pounds diced cooked chicken 1 can diced tomatoes
1 onion, chopped 1 can tomatoes with chiles (Rotel)
1 can black beans, drained & rinsed 1 can whole kernel corn
1 can pinto beans 1/3 cup sliced green olives
1 can pinkito beans (small pintos) 1/3 cup sliced black olives
1 package taco seasoning 1 package Ranch dressing mix
1. Mix all ingredients together in a slow cooker.
2. Cook on low heat for 4-6 hours or heat the soup in a large pan on top of the stove over low to medium heat for about one hour.
3. Place some broken tortilla chips or torn corn tortillas in the bowl before filling
4. Top with a few fresh cilantro leaves for added color and flavor.
