1 Rabbit cut into serving pieces8 slices of Bacon choppedKosher SaltBlack Pepper, fresh ground½ cup diced Shallots or Onion1 or 2 cloves of Garlic10 oz Chicken Stock¾ cup Red Wine1 ounce of Brandy1 tablespoon Wild Plum Jelly (or Blackberry, Currant, etc)Pinch of Rosemary, Thyme and a Bay LeafJuice of ½ a LemonCornstarch & Water
1. Cook Bacon. 2. Remove bacon, use the drippings to fry the rabbit. Salt and pepper the rabbit, dust with flour and fry until nicely browned 3. Remove rabbit and sauté shallots and garlic; add all other ingredients except lemon juice.4. Pour mixture over rabbit in a large pot, cover and cook over stovetop at a very low simmer for about 90 minutes, tighten with cornstarch add lemon juice and taste and adjust seasonings.
