1 Rabbit cut into serving pieces
8 slices of Bacon chopped
Black Pepper, fresh ground
½ cup diced Shallots or Onion
1 or 2 cloves of Garlic
10 oz Chicken Stock
¾ cup Red Wine
1 ounce of Brandy
1 tablespoon Wild Plum Jelly (or Blackberry, Currant, etc)
Pinch of Rosemary, Thyme and a Bay Leaf
Juice of ½ a Lemon
Cornstarch & Water
1. Cook Bacon.
2. Remove bacon, use the drippings to fry the rabbit. Salt and pepper the rabbit, dust with flour and fry until nicely browned
3. Remove rabbit and sauté shallots and garlic; add all other ingredients except lemon juice.
4. Pour mixture over rabbit in a large pot, cover and cook over stovetop at a very low simmer for about 90 minutes, tighten with cornstarch add lemon juice and taste and adjust seasonings.
