Lobster & Haricot Vert Salad

10 oz lobster, poached and medium diced
2 oz haicot vert, blanched, cut on angle
½ cup mayonnaise
1 orange, juice and zest
1 lemon, juice and zest
1 garlic clove, minced
½ tsp sugar
1 tsp truffle oil
2 tsp chives, minced
2 tsp tarragon, minced
2 tsp parsley, minced
2 tsp chervil, minced
salt and pepper to taste


1. To poach the lobster, cook it in a strainer over boiling aromatics for 8-10 minutes.
2. Immediately shock the lobster in an ice bath.
3. When the lobster is cooled, dice it.
4. Combine all ingredients in a bowl and chill until needed.
