Marinade Ingredients:
1-1/2 cups Buttermilk
2 tsp salt, divided
1/2 cup coarsely grated onion
1 tsp black pepper, divided
2-1/4 tsp dried mustard
2 Tbsp white vinegar
Ingredients:
4 skinless chicken breasts
1 cup Panko bread crumbs
3/4 tsp paprika
1/2 rounded tsp dried thyme
Cooking spray
Instructions:
Mix buttermilk, 1-1/2 tsp salt, onion, 3/4 tsp pepper, dried mustard and vinegar.
Add chicken, cover and refrigerate overnight.
Preheat oven to 425 degrees.
Combine panko bread crumbs, paprika, and remaining salt, pepper and thyme.
Remove chicken from marinade and dredge pieces in panko mixture.
Spray all sides with cooking spray.
Cook 35-45 minutes or until done.
