Pie Crust (store bought or homemade)
1 egg
¾ cup brown sugar
1 tsp. vanilla
¾ cup pecan halves
Preheat oven to 350 degrees. Spray mini muffin tin with cooking spray.
Roll out pie crust and using biscuit cutter, cut dough to fit into the cups of a mini muffin tin. Place dough into tin and form with fingers, if needed. Set aside and make the filling.
Mix egg, brown sugar vanilla together and fill pie cups ½ full of filling mixture. Place one pecan half into each muffin cup. Bake for 15-20 minutes until crust is golden. Allow pies to cool slightly before removing from pan. Once cool, store pies in an airtight container.
Add a little uniqueness to your pies by adding 1 T of orange zest or 1 T of Grand Marnier to your filling before placing into cups. You can also sprinkle a few mini chocolate chips into your cups once your filling has been added. Yum!
