Pumpkin Bread

INGREDIENTS:

Cook: 1 hour

Servings: 3 loaves

Ingredients:

3-1/3 cups Flour

3 cups Sugar

2 tsp Baking Soda

1 tsp Cinnamon

1 tsp Nutmeg

1/2 tsp Salt

(1) 15oz can Pumpkin (approx. 2 cups)

4 Eggs

1 cup Cooking oil

2/3 cup Water

1/2 cup Pecans, floured

DIRECTIONS:

1. Mix together flour, sugar, baking soda, cinnamon, nutmeg and salt in a large metal bowl.

2. Make a well and add pumpkin, eggs, cooking oil and water.

3. Mix until smooth.

4. Stir in pecans (optional).

5. Spray (3) loaf pans generously with cooking spray.

6. Pour mixture evenly into all (3) pans (approx. 2/3 full).

7. Bake at 350 degrees for 1 hour or until knife inserted in center comes out clean.
