Tomato Pie

Ingredients

1 pre-baked pie crust
Approx. 6 small tomatoes
12-15 leaves basil, chiffonade
1 1/2 cups mozzarella cheese
3/4 cup parmesan cheese
Salt and pepper

  1. Slice tomatoes and lay flat on paper towels. Salt and pepper tomatoes. Let sit for 10 minutes.
  2. Place mozzarella in bottom of pie crust. Layer tomatoes on top. sprinkle with basil, then top with parmesan.
  3. Bake at 350 degrees until cheese is melted and pie is heated through (approximately 30 minutes).

Serve warm or at room temperature.
