1 pre-baked pie crust
Approx. 6 small tomatoes
12-15 leaves basil, chiffonade
1 1/2 cups mozzarella cheese
3/4 cup parmesan cheese
Salt and pepper
- Slice tomatoes and lay flat on paper towels. Salt and pepper tomatoes. Let sit for 10 minutes.
- Place mozzarella in bottom of pie crust. Layer tomatoes on top. sprinkle with basil, then top with parmesan.
- Bake at 350 degrees until cheese is melted and pie is heated through (approximately 30 minutes).
Serve warm or at room temperature.
