Quinoa Cucumber Salad
1 cup quinoa, uncooked
1 large or 2 small cucumbers, peeled & cubed
1/2 Cup cider or white vinegar
½ cup grape tomatoes, sliced lengthwise
½ cup feta cheese crumbled (if desired)
1/2 red onion, thinly sliced
Salt & Pepper to taste
Cook 1 cup of quinoa as directed on package. Substitute vegetable or chicken broth for the appropriate amount of water to give the quinoa more flavor.
Toss cucumbers, tomatoes, onions, salt and pepper with vinegar. Set aside to marinate for at least 5 minutes. When quinoa is cooked, toss cucumber-vinegar mixture with quinoa. Gently stir in feta and serve immediately.
