Ingredients:
1 box yellow cake mix
3.4 ounce instant Lemon pudding mix
1/2 cup vegetable oil
4 large eggs
1/2 cup milk
8 ounces sour cream
1 tsp lemon zest
6 tablespoons freshly squeezed lemon juice
Icing
1 container of cake glaze (found in cake mix aisle)
2 tablespoon lemon juice
1 teaspoon vanilla bean paste
Preheat oven to 350 degrees and spray 2 loaf pans with cooking spray.
Directions:
To make cake: place the cake mix, pudding, milk, oil and eggs in a large mixing bowl. Mix with an electric hand mixer of 1 minute or until smooth. Add sour cream, lemon juice and lemon zest. Continue mixing till incorporated. Divide cake batter between two prepared loaf pans spreading evenly. Bake for 45-55 minutes, until golden brown and cooked through. Remove and let cool for 15 minutes before removing loaves from pans.
To prepare glaze, heat the cake glaze for 20 seconds in the microwave. Pour into a small bowl. Add in the vanilla paste and lemon juice. Stir and then drizzle over the cooled pound cake. Allow icing to harden. Slice into 1 1/2 inch slices and enjoy!
