Fire Roasted Red Pepper Soup

Ingredients:

2 cans fire roasted tomatoes

1 onion chopped

1 tbsp olive oil

3 red peppers roasted

4 cups chicken broth

1 bulb roasted garlic

Salt and pepper

Directions:

Sauté onion in olive oil till tender. Pour in the tomatoes, red peppers, garlic and broth. Cook for 20 minutes. Using a blender or immersion blender, pulse soup till it is smooth. Serve.
