Sweet And Spicy Chicken Meatballs
1 1/2 pounds lean ground chicken
2 tablespoon olive oil
1 large egg
3 tablespoons freshly chopped parsley
1 tablespoon tomato paste
2 clove garlic, minced
1/4 cup milk
1/2 cup grated Parmesan/Romano cheese
1/3 cup Italian Bread crumbs
1 teaspoon Tuscan spice blend
Salt and pepper
2 tablespoon tomato paste
1/4 Thai Chili Sauce
Preheat oven to 375 degrees. In a large bowl combine the ground chicken, olive oil, egg, parsley, tomato paste, garlic, milk, parmesan cheese, bread crumbs, spice blend, salt and pepper. Mix together well. Allow the meatballs to sit in the refrigerator for 30 minutes before rolling into balls. To make a larger dinner sized meatball, use a 1/4 cup measuring cup to scoop the meatball mixture. Lightly dampen your hands and roll the meatballs and place on a parchment lined baking sheet. Continue till all the meatballs are formed and then place in the oven to bake for 20 minutes. While the meatballs are cooking, combine the tomato paste and chili sauce in a small bowl. Place a heaping spoonful on top of each meatball and allow them to cook an additional 10 minutes. Serve while hot!
