Buttermilk Chocolate Loaf with Peppermint White Chocolate Mousse
2 cups sugar
1 tablespoon vanilla
1 teaspoon Nielsen-Massey chocolate extract
1/2 cup baking cocoa
2 tsp. baking soda
1 tsp. salt
2/3 cups vegetable oil
1 cup boiling water
1 cup buttermilk2 1/2 cups cake flour
Preheat oven to 350 degrees. Spray a loaf pan with non-stick cooking spray. In a medium sized bowl combine all the ingredients stirring till well combined and then bake for 45 minutes! Allow the cake the cool and then slice into 3rd lengthwise.
Peppermint White Chocolate Mousse
2 cups Braum's whipping cream, whipped
1 teaspoon Nielsen-Massey peppermint extract
4 ounces melted white chocolate
Melt the white chocolate in a microwave and allow it to cool slightly before folding into the whipping cream. Add the peppermint extract to the whipping cream and combine with the chocolate. Spread the mousse over the layers and sprinkle with crushed peppermint candies.
