Chicken Fried Pork Fingers
4 thick cut boneless pork chops
1 teaspoon seasoning salt
1 cup all-purpose flour
1/2 cup cornstarch
2 eggs beaten
2 cups Pablo bread crumbs
Canola oil
Cut each pork chop into strips lengthwise. Using a tenderizer prepare each strip. Heat the oil in a fryer or Dutch oven to 350 degrees. To dredge the pork: place the flour, cornstarch and seasoning salt in a shallow pie pan or plate, then place the beaten egg in a separate shallow dish and continue the same method with the Panko bread crumbs. Dip each strip into the flour and then the egg and then into the Panko. Fry each strip until and they are cooked through. Serve with your favorite honey mustard or Ranch dressing.
