Zucchini Lasagna Boats
- 2-3 large zucchini
- 2 cups ricotta cheese
- 1/4 cup Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 cup mozzarella cheese
- 2 cups marinara sauce or frozen meat sauce
- Preheat oven to 350 degrees. Cut the zucchini in half lengthwise. Remove the seeds from the middle and hollow out to make a "boat."
- In a small bowl, mix together the ricotta cheese, Parmesan cheese and Italian seasoning.
- Place the zucchini boats in a shallow baking dish. Add spoonfuls of the ricotta mixture into the middle of the boats. Spoon the sauce over the top of the boats and sprinkle with mozzarella cheese.
- Bake for 20-30 minutes until bubbly. Serve with a crusty French bread.
