Preheat oven to 350 degrees. Cut the zucchini in half lengthwise. Remove the seeds from the middle and hollow out to make a "boat."
In a small bowl, mix together the ricotta cheese, Parmesan cheese and Italian seasoning.
Place the zucchini boats in a shallow baking dish. Add spoonfuls of the ricotta mixture into the middle of the boats. Spoon the sauce over the top of the boats and sprinkle with mozzarella cheese.
Bake for 20-30 minutes until bubbly. Serve with a crusty French bread.
