Pumpkin Banana Chocolate Chip Cream Cheese Loaf
- 1 can pumpkin puree
- 2 cups sugar
- 4 eggs
- 1 banana, mashed
- 1/2 cup vegetable or canola oil
- 2/3 cup milk
- 1 tablespoon vanilla
- 2 tablespoon pumpkin pie spice
- 1 1/2 teaspoon sea salt
- 2 teaspoon baking soda
- 3 1/2 cups all purpose flour
- 1 cup chocolate chips
Cream Cheese Filling
- 1 (8 ounce) container cream cheese
- 1/4 cup sugar
- 1 egg
- 1/2 teaspoon vanilla
- Preheat oven to 350 degrees and spray 2 loaf pans with non-stick cooking spray.
- In a large bowl mix together the pumpkin puree, sugar, eggs, smashed banana, oil, milk vanilla, spices, salt.
- Using an electric hand mixer combine the ingredients and slowly add in the flour till mixed thoroughly.
- Add in the chocolate chips.
- To make the cream cheese filling, beat together all of the cream cheese filling ingredients.
- Pour 1/4 of the pumpkin batter into the bottom of each loaf pan, then add equal amounts of the cream cheese mixture to each loaf pan.
- Top with the remaining pumpkin batter. Bake for 55-60 minutes or until cooked through.
