Pumpkin French Toast
- 1 loaf pumpkin bread, cut into 1/2 inch slices
- 1 can coconut milk
- 3 eggs
- 1 cup of pumpkin puree
- 1/3 cup sugar
- 1 tbsp. vanilla
- 1 tbsp. cinnamon
- 1/2 teaspoon salt
- Toasted coconut and roasted pumpkin seeds
- Whipped cream
- Syrup
- Place a nonstick skillet on the stove at medium heat.
- In a shallow dish, whisk together the coconut milk, pumpkin puree, sugar, vanilla, cinnamon, and salt.
- Set a pumpkin bread slice, one at a time, into the custard mixture.
- Allow the bread to sit for 20 seconds and then flip over and repeat.
- Brush the warm.skillet with butter and set the bread slice in the pan.
- Cook for 3-4 minutes or until browned on each side and serve with whipped cream and sprinkle with toasted pumpkin seeds.
