Pesto Caprese Chicken

Pesto Caprese Chicken
- 4 boneless skinless chicken breasts
- 1/2 cup prepared pesto sauce
- 1 tomato, sliced into 4 slices
- 1 cup shredded Mozzarella cheese or Italian cheese blend
- Fresh basil
- Preheat oven to 350 degrees.
- Spray a casserole dish with nonstick cooking spray.
- Place the 4 chicken breasts in the dish and sprinkle with salt and pepper.
- Add 1-1/2 tablespoons pesto to the top of the chicken breast and spread to cover completely.
- Repeat on the remaining 3 pieces of chicken.
- Sprinkle 1/4 cup of shredded cheese on top of each chicken breast.
- Add a slice of tomato on top of each one and then bake for 30 minutes or until bubbly and chicken is cooked through.
- The last 5 minutes of baking turn the broiler on and cook so cheese gets nice and toasty.
- Serve hot and with your favorite green salad.
