Rustic Apple Cranberry Pie

  • 1 refrigerated pie crust
  • 2 Granny Smith apples, peeled & sliced thin
  • 1/4 cup cranberries
  • 1/4 cup honey
  • 1/3 teaspoon cinnamon
  • 1 egg beaten
  1. Preheat oven to 350 degrees.
  2. Line baking sheet with parchment paper.
  3. Set the pie crust in the center of the baking sheet.
  4. Arrange the apple slices in the center of the pie crust leaving 3 inches around the edges.
  5. Mix the cornstarch with the cranberries and put in top of the apples.
  6. Drizzle with honey.
  7. Fold the edges to the center but leaving room open the middle.
  8. Brush with beaten egg and sprinkle with sugar.
  9. Bake for 30-40 minutes or until crust is golden brown and middle is bubbly.
  10. Serve with whipped cream or vanilla ice cream!
