Rustic Apple Cranberry Pie
- 1 refrigerated pie crust
- 2 Granny Smith apples, peeled & sliced thin
- 1/4 cup cranberries
- 1/4 cup honey
- 1/3 teaspoon cinnamon
- 1 egg beaten
- Preheat oven to 350 degrees.
- Line baking sheet with parchment paper.
- Set the pie crust in the center of the baking sheet.
- Arrange the apple slices in the center of the pie crust leaving 3 inches around the edges.
- Mix the cornstarch with the cranberries and put in top of the apples.
- Drizzle with honey.
- Fold the edges to the center but leaving room open the middle.
- Brush with beaten egg and sprinkle with sugar.
- Bake for 30-40 minutes or until crust is golden brown and middle is bubbly.
- Serve with whipped cream or vanilla ice cream!
