Banana Peanut Butter Power Muffins

  • 2 bananas, mashed
  • 1/4 cup honey
  • 1/4 cup packed brown sugar
  • 1/2 cup Honey Vanilla Greek Yogurt
  • 1 large egg
  • 1/3 cup milk
  • 1/2 cup creamy peanut butter
  • 1 teaspoons vanilla extract
  • 1 and 3/4 cup old fashioned oats, pulsed into flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

To prepare the oat flour, pulse the old fashioned oats in a food processor till it turns into flour. In a medium bowl, mix together the mashed banana, peanut butter, egg, yogurt, brown sugar and honey. Stir in the cinnamon, baking soda, baking powder, vanilla, and salt. Slowly alternate stirring in the oat flour and milk till it is all mixed into the peanut butter mixture. Preheat oven to 400 degrees. Line a muffin tin with paper muffin cups. Fill the muffin cups 3/4 of the way full. Bake for 10 minutes at 400 degrees and then lower to 350 degrees and cookie for an additional 15 minutes or until cooked through. Cool muffins and store in an airtight container.
