Strawberry Yogurt Ice Cream Sandwiches

  • 4 (6 ounce) vanilla & honey Greek yogurt
  • 1 cup fresh strawberries or 1 cup frozen strawberry topping
  • 1 (8 ounce) container Cool Whip
  • 1/2 cup chocolate chunks, chopped
  • Graham crackers
  1. Line a 9x13 baking sheet with parchment paper or wax paper so it comes over the edge.
  2. It will make lifting the bars out so much easier.
  3. Place graham cracker squares “pretty side down” until the pan is covered.
  4. In a medium sized bowl, mix together the Greek yogurt and strawberries.
  5. Fold in the Cool Whip till combined well with strawberry mixture.
  6. Fold in chocolate chunks.
  7. Pour the strawberry mixture into a pan and spread evenly to cover the graham crackers.
  8. Top with more graham crackers pretty side up.
  9. Cover with plastic wrap and freeze overnight.
  10. The next day, lift the bars out of the pan and cut into squares.
  11. Wrap each square in wax paper or plastic wrap.
  12. Store in the freezer till you are ready to eat!
