Buttermilk Coffee Cake

  • 1 cup sugar
  • ½ cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk, shake
  1. Preheat the oven to 350°F.
  2. Lightly coat a 9 x 13-inch baking pan with nonstick spray; set aside.
  3. In a large bowl, cream the sugar and butter together with an electric mixer until light and fluffy. 
  4. Add the eggs one at a time, blending well after each addition.
  5. Blend in the vanilla.
  6. In a separate bowl mix together all of the dry ingredients.
  7. Now, combine half of the dry ingredients half of the buttermilk making sure to mix well and repeat.
  8. Spread half of the batter into the bottom of the pan sprinkle with streusel topping at dollops of the batter on top of the topping and then sprinkle with remaining streusel topping.
  9. Bake for 30 to 40 minutes or until a toothpick comes clean out of the middle of the cake.
  10. Serve warm.

Cinnamon Streusel:

  • 1 cup brown sugar
  • ¼ cup all-purpose flour
  • ¼ cup butter, softened
  • 4 teaspoons ground cinnamon

To make streusel topping:

Combine the flour and brown sugar and butter using a pastry blender or fork till crumbles are formed.
