BBQ Chicken Dinner

  • 4 boneless chicken breasts
  • BBQ seasoning blend
  • 1/4 cup barbecue sauce
  • 4 potatoes, sliced thin approx. 1/4 inch
  • 1/2 cup cheddar cheese, shredded
  • 2 teaspoon all purpose seasoning blend
  • 2 1/2 cups kernel corn
  • Salt and pepper
  • Heavy duty foil
  • 1 (18x13x1) baking sheet
  1. Preheat oven to 375 degrees.
  2. Line baking sheet completely with foil.
  3. Place the chicken in 1/3 of the baking sheet.
  4. Sprinkle with BBQ seasoning.
  5. Pour the corn into the next 3rd of the pan and then add slices of potatoes to the next 3rd.
  6. Sprinkle with the corn with salt and pepper.
  7. Spray the potatoes with non stick cooking spray and sprinkle with all purpose seasoning.
  8. Bake in the oven for 25 minutes.
  9. Remove from the oven and drizzle chicken with barbecue sauce and sprinkle cheese over the top of the potatoes.
  10. Return pan to the oven and cook till cheese is browned.
  11. Serve!

**This can be easily reduced to feed 2 as well as 4.
