Rainbow Fresh Rolls
- 6 sheets Vietnamese rice paper
- 1 mango, peeled and cut into thin strips
- 1 papaya, peeled and cut into thin strips
- 1 star fruit, cut thin
- 1 kiwi, peeled and cut into thin strips
- 1 strawberry, cut into thin strips
- 1/3 cup mint leaves
- 2 cups lukewarm water
- Sugar free or all-natural jam, warmed for dipping
- To assemble the rainbow rolls, dip one sheet of the rice paper into a wide shallow pie pan or deep plate of lukewarm water.
- Shake off the excess water and quickly transfer it to a dry chopping board.
- Lay the mango slices in the center of the rice paper, follow with the remaining fruits.
- Fold the bottom side of the rice paper over the filling securely, then fold the left and right sides of the rice paper over the filling.
- Make sure the filling is wrapped tightly.
- Continue to roll it over and set on a plate seam side down.
- When storing the rolls make sure they do not touch or the rolls will stick together.
- Refrigerate and store in an airtight container.
- Serve with warmed jam or peanut butter as a sauce for dipping.

**Have fun experimenting with different fruits and melons. Avoid bananas or extra watery fruits like watermelon.
