Rainbow Fresh Rolls

  1. 6 sheets Vietnamese rice paper
  2. 1 mango, peeled and cut into thin strips
  3. 1 papaya, peeled and cut into thin strips
  4. 1 star fruit, cut thin
  5. 1 kiwi, peeled and cut into thin strips
  6. 1 strawberry, cut into thin strips
  7. 1/3 cup mint leaves
  8. 2 cups lukewarm water
  9. Sugar free or all-natural jam, warmed for dipping

  1. To assemble the rainbow rolls, dip one sheet of the rice paper into a wide shallow pie pan or deep plate of lukewarm water.
  2. Shake off the excess water and quickly transfer it to a dry chopping board.
  3. Lay the mango slices in the center of the rice paper, follow with the remaining fruits.
  4. Fold the bottom side of the rice paper over the filling securely, then fold the left and right sides of the rice paper over the filling.
  5. Make sure the filling is wrapped tightly.
  6. Continue to roll it over and set on a plate seam side down.
  7. When storing the rolls make sure they do not touch or the rolls will stick together.
  8. Refrigerate and store in an airtight container.
  9. Serve with warmed jam or peanut butter as a sauce for dipping.
  10. YUMMY!

**Have fun experimenting with different fruits and melons. Avoid bananas or extra watery fruits like watermelon.
