Bunny-Licious Sugar Cookies
2/3 cup butter flavored Crisco
2/3 unsalted butter, softened
1 1/2 cups sugar
2 teaspoons vanilla extract
1 teaspoon lemon extract
2 teaspoons baking powder
1 teaspoon kosher salt
3 cups and 2 tablespoons all-purpose flour
1 tub vanilla frosting (not whipped)
2 teaspoon Princess flavoring
1 cup coconut
Green food coloring
Pastel colored sugar crystals
Bunny shaped Peep candies
Preheat to 350°. Line a baking sheet with parchment paper or Silpat. In the bowl of an electric mixer cream together the shortening, butter and sugar. Add in the egg, vanilla and lemon flavoring and mix well.
In a medium sized bowl combine the baking powder and flour. Slowly mix in the flour mixture to the butter till well combined. Using a cookie scoop, place scoops of dough on the parchment paper. Flatten slightly. Bake for 12 minutes. Remove from oven and allow to cool.
To frost: Add in the Princess flavoring to the tub of vanilla frosting. Stir and then frost cookies.
Bunny Cookies: Dip the frosted cookies in sanding sugar and then press a bunny Peep in the center.
Egg Hunt Cookies: Place 1 cup of shredded coconut in a Ziploc bag and pour in the green food coloring. Toss till the coconut turns green. Then sprinkle the green coconut on the candy melt and then add egg shaped candies.
