Tex Mex Egg Rolls

Taco night is easy and you can even stretch your leftovers into a second night with Tex Mex Egg Rolls.

Tex Mex Egg Rolls

1 package Spanish Rice Mix, prepared by package directions
1/2 to 1 lb. pork sausage or ground beef, seasoned with 1T taco seasoning and cooked until no longer pink.
1 can black beans
1 can diced tomato and green chilies
1-2 cups Monterey Jack or Cheddar cheese
Egg roll wrappers
*Cilantro, cumin, and jalapenos are great additions to this recipe.

Mix rice, meat, beans, tomato & green chilies, and cheese.

Roll ‘em up…

Lay out your egg roll wrapper. Place about 1/3 cup mixture in the center. Roll one corner over the top, then roll the sides over tightly. Brush egg wash on remaining corner and roll to seal.

Pour oil in a skillet 1/2 to 1 inch deep. Fry, turning once, until golden brown.

Tequila Lime Dipping Sauce

8 oz sour cream
2 T. tequila
Splash milk
Lime zest
Juice of one lime
Dash salt

Mix together and chill.
