Cherry Berry Zucchini Muffins
- 1 cup canola oil (or 1/2 applesauce & 1/2 oil)
- 2 cups sugar
- 3 eggs
- 3 cups all-purpose flour
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2-1 cup chopped fresh cherries
- 1 cup shredded zucchini
- Preheat oven 350 degrees. Line a muffin tin with muffin cups. In a large bowl, mix together the canola oil, sugar, and vanilla extract.
- Add all of the dry ingredients to a medium sized bowl and mix together. Slowly add the dry ingredients to the wet ingredients and stir till completely combined. Stir in the shredded zucchini chopped cherries making sure to stir well.
- Add heaping scoops of the batter to the muffin cups and bake for 25-30 minutes or until golden brown and cooked through.
- Cool for 10 minutes and remove from muffin tins and serve with honey or your favorite jam.
