Hawaiian CousCous Salad

  • 1 box couscous 
  • 1 cup coconut milk
  • 1/4 cup chopped natural coconut
  • 1/4 cup macadamia nuts, chopped
  • 1/4 cup dried mango, diced
  • 3 green onions, chopped
  • 1 small can pineapple tidbits in pineapple juice (save the juice)
  • 1/2 cup olive oil
  • Salt and pepper
  • 2 tablespoons honey
  1. Prepare the couscous with coconut milk according to package instructions.
  2. Allow the couscous to cool in a large bowl.
  3. Stir in the coconut, macadamia nuts, dried mango, and green onions.
  4. To make the dressing whisk the pineapple juice with the olive oil, salt and pepper, and honey.
  5. Drizzle the couscous couscous salad with the dressing.
  6. This salad can stay refrigerated for up to a week when stored in an airtight container.
