Mashed Potato Pancakes

Mashed Potato Pancakes
- 3 cups mashed potatoes
- 1 egg, beaten
- 6 tablespoons all purpose flour
- Diced green onion
- 1/4 cup cheddar cheese
- Applesauce and sour cream
- Canola or vegetable oil
- Place a medium sized skillet on the stove and add oil.
- Heat to medium high.
- In a medium bowl mix together the mashed potatoes, egg, 3 tablespoon flour, green onion and cheddar cheese till combined.
- In a smaller plate add the remaining flour.
- Season with salt and pepper.
- Use a cookie scoop to portion out the pancakes.
- Gently flatten in your hands and then dredge in seasoned flour.
- Carefully place the pancakes in the hot oil and fry for 3-4 minutes or until browned.
- Flip the pancakes and brown the other side.
- Once the pancakes are done cooking place on a paper towel lined plate.
- Serve with applesauce and sour cream.
