Slice and Bake PB Rainbow Chip Cookies

  • 10 tablespoon unsalted butter, softened
  • 2/3 cups peanut butter
  • 1 teaspoon vanilla
  • 2/3 brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups flour
  • 1 cup M&M mini's
  1. In a medium sized bowl, cream together the butter and peanut butter till smooth.
  2. Add in the vanilla and sugar and beat together for 1 minute.
  3. Mix the dry ingredients together with the butter mixture until incorporated.
  4. Stir in the candy pieces.
  5. Place the cookie dough on a piece of plastic wrap in the shape of a log.
  6. Roll to cover completely and refrigerate for at least two hours.
  1. To bake: preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. Cut the cookies into 1/2 inch slices and place on baking sheet.
  3. Bake for 8-9 minutes or until golden brown.
