Sausage Hash In Acorn Squash

  • 1 package smoked sausage, cut into cubes
  • 1/2 onion, cubed
  • 1 apple, cored and cubed
  • 1/2 yellow pepper, cubed
  • 1 cup mushrooms, sliced
  • 2 tablespoon olive oil
  • 2 acorn squash
  • Honey
  1. Preheat oven to 350 degrees.
  2. To prepare the acorn squash, cut in half and remove top and ends slightly so it can sit flat on a baking sheet.
  3. Remove all seeds from the acorn squash and place cut side open on a baking sheet.
  4. In a large skillet sauté the smoked sausage onions peppers mushrooms and apple till golden.
  5. Add spoonfuls of the hash to the inside of the acorn squash evenly.
  6. Bake the acorn squash for 30 minutes.
  7. Remove from oven to cool slightly.
  8. Before serving drizzle with honey.
