BLT Chopped Salad

  • 4 slices bacon or pancetta, diced and fried crisp
  • 4 cups chopped romaine lettuce or butter lettuce
  • 1 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 1/4 cup champagne or apple cider vinegar
  • Zest of 1 lime
  • 2 tablespoons freshly squeezed lime juice
  • 2 teaspoons agave nectar or sugar
  • Salt and pepper
  1. To make the vinaigrette, whisk together olive oil, apple cider vinegar, lime zest and juice, and sugar in a small bowl; set aside or place all of the ingredients in a mason jar and shake!
  2. Perfect for storage. In a large bowl, combine romaine lettuce, avocado, tomatoes, goat cheese and bacon.
  3. Stir in lime vinaigrette.
  4. Serve with homemade croutons
