Warm Bacon Spinach Salad

  • 1 package baby spinach
  • 7 slices thick cut bacon, cooked crisp (save drippings)
  • 1/2 red onion, sliced thin
  • 1 cup sliced button mushrooms
  • 1/4 cup candied pecans, chopped
  • 3 hard-boiled eggs, sliced thin
  • Blue cheese crumbles


  • 3 tablespoon bacon drippings
  • 2 tablespoon honey
  • 1 tablespoon dijon mustard
  • 3 tablespoons balsamic vinegar
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  1. Cook the bacon till it is crisp and then drain on a paper towel.
  2. Remove all but 3 tablespoons of the bacon drippings.
  3. To make the dressing: Gently warm the bacon drippings with the garlic and stir in the honey, mustard, and balsamic vinegar till combined.
  4. Place the spinach, crumbled bacon, mushrooms, red onion pecans and eggs in a large salad bowl.
  5. Drizzle with dressing and toss together. Serve with crumbled blue cheese.
