Fresh Corn and Shrimp Chowder

  • 1 yellow onion, diced
  • 3 celery stalks, diced
  • 3 red potatoes, cut into 1 inch cubes
  • 4 slices of bacon, cut thin
  • Fresh thyme
  • 1 pound shrimp, cleaned and deveined, cut into pieces
  • 4 cups chicken broth
  • 2 cups half and half
  • Salt and pepper
  1. In a large stock pot sauté the onion, celery and bacon together with the fresh thyme.
  2. Once the bacon is lightly browned, add the chicken broth and potatoes. Cook till the potatoes are tender.
  3. Add in the shrimp and half and half. Cook over medium heat until the shrimp are cooked through. Add salt and pepper as needed.
