Slow Cooker Red Beans And Rice
1 lb dried red beans
8 cups water
1 package Andouille sausage, sliced
1 onion, chopped
1 green pepper, chopped
1 ham hock
1 tablespoon Cajun seasoning
1 teaspoon pepper
1 bay leaf
3 cups cooked white rice
Place the water and red beans in a slow cooker. In a skillet, saute the Andouille sausage with onions and green peppers till tender. Add the sausage to the red beans along with the ham hock, Cajun seasoning, pepper, and bay leaf. Cook on High for 8 hours. Serve over hot white rice.
