INGREDIENTS:

2 cups watermelon, seeded and cubed
2 teaspoons mint, chopped
1/4 cup green onions, chopped
2 kiwi fruit, peeled and cubed
1 cup strawberries, cleaned and sliced
1/4 cup fresh lemon juice
1/4 cup light raspberry dressing
salt and pepper to taste

DIRECTIONS:

1. Prep and measure all ingredients.

2. Place all ingredients, except the dressing, into a large mixing bowl and toss lightly.

3. Refrigerate for at least 4 hours to give salad a chance to marinate.

4. Add dressing to bowl and mix well right before serving. Makes 8 servings.
